4lbs. of red potatoes.
1/2 lb. applewood smoked bacon or regular bacon.
1 1/4c. mayo.
2 tbl. brown spicy mustard.
2 tbl. BBQ sauce.
2 tbl. sherry vinegar or apple cider vinegar.
2 celery stalks.(chopped).
1/2c. red onion.
1/4c. fresh parsley (optional).
1 tbl. fresh tarragon (optional).
salt and pepper to taste.

Directions:

Boil potatoes whole in cold water for 35 minutes.
Cook bacon (drain and set aside).
In a medium bowl mix mayo, BBQ sauce, mustard and vinegar. Fold in warm potatoes - mix and let stand for 20 minutes to absorb dressing.
Add celery, onion and herbs and salt and pepper.
Let stand 20 minutes.
Garnish with bacon and serve or refrigerate and add bacon later.
