1 T. butter
1-2 medium onions, chopped
2 lbs. ground round or chuck
1 c. diced celery
1 green pepper, chopped
1 tsp salt
1/4 tsp pepper
1 pkg 12-16 oz wide noodles
1 lb grated Cheddar cheese
4 T chili powder
1 can tomatoes (20 oz.)
1 small can green chiles, chopped

Directions:
Directions:
Preheat oven to 350

In large skillet, or Dutch oven, melt butter and brown onions. Add meat, stirring until cooked. Add celery, bell pepper, chili powder, tomatoes, green chiles, salt & pepper. Cover and cook over low heat for 1 hour, adding water to moisten, if necessary.
Cook noodles according to directions on package. Add to meat mixture along with 3/4 cheese.
Pour into 9 x 13 dish, grease, and sprinkle with remaining cheese. Bake until cheese melts, casserole is bubbly - 20 minutes or so.
