Sweet Pie Crust:
1/2 c. butter
1/3 c. sugar
1 egg
1 tbsp. milk
1/2 tsp. vanilla
1/4 tsp. salt
1 1/4 c. flour

Filling:
1 1/2 c. cooked wheat
1/2 c. sugar
3 eggs
1/2 tsp. almond or vanilla extract
1/2 tsp. salt
1/2 tsp. nutmeg
1/4 c. citron *
1/4 c. chocolate chips *
1 orange peel grated *
2 lb. firm Ricotta

Crust:
Make crust night before and refrigerate. Roll out enough dough to cover bottom of pie plate. Roll remaining dough and cut into strips for pie lattice.
Filling:
Soak 1 cup raw wheat over night. Cook in same water - NO SALT - bring to boil - DO NOT STIR - boil for 20 minutes. Lower heat and simmer at least 1 hour adding hot water as needed. Cool.
Mix remaining ingredients in same order.
Fill pie crust and top with dough strips.
Bake 350º for 1 hour.
