1 cup olive oil

3/4 cup each: minced white onion, minced garlic and tomato paste

1 (No. 10) can (12 cups) peeled Italian pear-shaped tomatoes

5 tablespoons sugar

3 1/2 tablespoons salt

1 cup fresh chopped basil

1 tablespoon black pepper

Directions:
Heat oil in 8-quart pot over medium heat. Add onion and garlic; cook until light brown. Add tomato paste and cook
until dark red. Add tomatoes, sugar and salt; cook 1 hour, stirring frequently. Add basil and pepper. Remove from heat;
use immediately or cool and freeze for later use. Makes 1 gallon.
