1 pound dry black beans
2 quarts chicken stock
¼ cup olive oil
1 onion chopped
5 cloves of garlic, chopped
2 fresh hot chilies, seeded and chopped
¼ fresh parsley, chopped
½ cup fresh cilantro chopped

Directions:
Directions:
Rinse dried black beans with cold water in strainer. In large stock pot, combine chicken stock, beans and olive oil. Slow boil until stock starts to turn black, approximately 2 hours. Add onion, garlic, chilies, parsley and cilantro. Continue to slow boil until beans are tender and stock is slightly thick.

Serve with a combination of sour cream, grated Monterey Jack and Cheddar cheese, salsa and chopped cilantro. Wonderful as a side dish or serve with flour tortillas and fresh salad as a main course
