1 lb lean ground beef,
1 medium onion chopped,
2 cloves garlic minced,
1 tsp dried Italian seasoning,
1/4 tsp pepper,
1/2 tsp salt,
1 pkg frozen mixed vegetables (16 oz),
1 can diced tomatoes drained (I like garlic oregano),
1 jar 12 oz savory beef gravy (Heinz)
1 container refrigerated mashed potatoes,
2 Tbl grated Parmesan cheese,
1/2 cup grated cheddar cheese

1, Heat broiler. 2. On medium-high heat brown ground beef, onion, garlic, Italian seasoning, salt and pepper breaking up beef. Stir in vegetables, tomatoes and gravy; lower heat and simmer covered 5-10 minutes until vegetables are soft. 3. Meanwhile heat potatoes in microwave as package directs. Drop spoonfuls of potatoes on top of beef mixture; sprinkle with both cheeses. Place under broiler for 5 minutes or until cheese is bubbly.
