1 1/2 cups granulated sugar
3 tbsp all-purpose flour
3 eggs, lightly beaten
1/4 cup (1/2 stick) margarine, melted
3/4 cup buttermilk
1 tsp vanilla extract
2 regular 9 inch pie shells, or 1 deep dish pie shell, unbaked
1 tsp ground nutmeg

Preheat oven to 350º. In a small bowl, mix together the sugar and flour and set aside.
In a large bowl, combine eggs melted margarine. Mix well. Gradually add sugar-flour mixture, stirring well. Add buttermilk and vanilla. Stir until just blended. Pour into unbaked pie shell or shells and sprinkle with ground nutmeg. Bake 30 to 35 minutes for regular shells and 40 minutes for deep-dish, until filling is almost firm. Remove from oven and allow to cool at least 1 hour before cutting.
