2 Pounds Fresh Squash, Thinly Sliced
2 Green Bell Peppers, Seeded and Chopped
1 Large Onion, Chopped
2 Tablespoons Canola Oil
1 Can (15 oz.) Cream-Style Corn
1 Tablespoon Sugar
1/4 Cup Cornmeal
Salt and Pepper to taste

Preheat oven to 350 º. On the stove or in the microwave, steam the fresh squash in 1/4 cup of water for about 10 minutes or until tender. Drain and mash or puree the squash in a food processor. In a large non-stick skillet, saute the green pepper and onion in oil until tender. Combine squash, onion mixture, corn, sugar and cornmeal. Add salt and pepper. Place the mixture in a 2 quart casserole dish coated with non-stick cooking spray. Bake for 30 minutes or until bubbly and thoroughly heated. Makes 6 servings (136 calories).
