1 Cup Sugar
3/4 Cup Oil
1 Egg
1 1/4 Cups Flour
1/2 Tsp. Salt
1 Tsp. Baking Soda
1 Tsp. Cinnamon
1 1/2 Cups Grated Carrots
1/2 Cup Nut Meats
Raisins (optional)

Frosting
1/2 Stick Margarine
1/2 lb. Confectioners Sugar
1/2 Pkg (4 oz.) Cream Cheese
Vanilla

Directions:

Mix together sugar, oil and egg. Next mix in the grated carrot, nut meats and raisins. Slowly add dry ingredients, mixing thoroughly.

Preheat oven to 300º. Grease and flour 8" x 8" pan, spoon in batter. Bake for one hour. [For a 9" x 13" cake, double the recipe.

For the frosting, beat together margarine and cream cheese, add vanilla to taste. Blend in confectioners sugar to desired consistency.
