3 eggs
1 cup vegetable oil (or sub ½ cup oil & ½ cup applesauce)
2 cups sugar
1 Tbsp vanilla extract
2 cups shredded and peeled zucchini
2 ½ cups all-purpose flour
1/2 cup baking cocoa
1 tsp salt
1 tsp baking soda
1 tsp cinnamon
1/4 tsp baking powder

Directions:
Directions:
In a mixing bowl, beat eggs, oil, sugar & vanilla. Stir in zucchini. Combine dry ingredients. Add to zucchini mixture and mix well. Pour into 2 greased 8x4x2 inch loaf pans. Bake at 350 degrees for 1 hour or until bread tests done.
