1 large onion
2 medium zucchini, thinly sliced
2 Tbsp oil
2 cans (16 oz each) stewed tomatoes
1/2 tsp pepper
1 1/2 cups minute rice
1/2 cup grated Parmesan cheese

Directions:
Directions:
Cook onion and zucchini in hot oil in skillet until tender. Add tomatoes and pepper. Bring to boil.
Reduce heat; cover and simmer for 5 minutes. Stir in rice and cheese; cover. Remove from heat and let stand for 5 minutes.
