6 flour tortillas cut into 1/2 inch strips
4 cans green chiles (drained)
1 lb bulk pork sausage cooked and drained
2 cups shredded cheese (cheddar or jack)
10 eggs
1/2 cup milk
1/2 tsp each: salt, garlic salt, onion salt, pepper and cumin
2 medium tomatoes sliced
sour cream and salsa

Grease a 13 x 9 pan. You will use the ingredients to create two layers. Each layer will have tortilla strips, chilies, sausage and cheese. In a bowl, beat eggs and milk. Pour egg mixture over the cheese. Cover and refrigerate over night. Remove from fridge 30 minutes before baking. Bake uncovered at 350 degrees for 50 minutes. Arrange tomatoes over top layer. Bake 10-15 minutes more. Let stand 10 minutes before serving.
