2 tablespoons butter
1/4 cup boiling water
about 2/3 cup orange juice
4 teaspoons grated orange rind
1 egg
1 cup sugar
2 cups flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 cup fresh blueberries
1 tablespoon honey

Directions:
Directions:
Melt butter in boiling water. Add 1/2 cup orange juice and 3 teaspoons orange rind. Beat egg with sugar until light and fluffy.
Add sifted dry ingredients alternately with orange liquid, beating until smooth. Fold in berries. Bake in large loaf pan (greased) or 2 or more small (greased) pans at 325º for about 1 hour 10 min. (decrease time for small pans).
Turn out on rack to cool.
Mix 2 tablespoons orange juice, 1 teaspoon rind and honey, brush over top of hot loaf. Let stand until cold.
It can be frozen.
