1 cup sugar 1/2 cup vegetable oil 2 eggs 1 cup self-rising flour 1 tsp vanilla 2 bananas (ripe) 1/2 cup chopped nuts (optional)
Preheat Oven to 350º Cream sugar and oil. Add eggs, flour, vanilla, and bananas. Stir in nuts. Bake in greased and floured loaf pan for 35-40 minutes. For muffins: fill cups 3/4 full and bake 15-18 minutes.
