New Zealand Salad Recipe

6 gloves garlic, peeled and chopped
1/2 c vegetable oil
1/2 c smooth peanut butter
1/4 c dry sherry
1/2 c honey
2 tbsp sesame oil
1/4 c ginger, peeled and chopped
1/2 c tahini
1/2 c soy sauce
1/4 c sherry vinegar
1/2 tsp chili oil
salt and pepper

500g spaghetti or sobli noodles
1 red capsicum, julienned
1 green capsicum, julienned
4 spring onions, sliced diagonally

In a food processor, place garlic and ginger. Add the remaining sauce ingredients and puree. Cook the spaghetti until al dente. Drain and while still warm toss with 3/4 sauce. Add capsicums and spring onions and toss again. If necessary add more sauce. Serve warm or at room temperature.
