1/2 lb butter
1 lb. dark brown sugar
3 eggs (large)
4 c. sifted flour
1/5 tsp. salt
1 c. chopped nut meats
1 tsp. vanilla
1 tsp. baking soda
1 tsp. cream of tartar
2 oz. chopped candied ginger (or more)

Directions:
Directions:
Cream butter and sugar. Beat 3 eggs well and add to butter and sugar. Add vanilla. Sift together dry ingredients and add to mixture. Add nut meats and ginger before flour. Roll into 3-4 rolls. Wrap in wax paper. Let stand overnight before putting into refrigerators to harden. Cut into thin slices and place on pan. Bake at 350 degrees F about 15 minutes for each batch.
