Preheat oven to 350

1 can garbanzo beans, drained and rinsed
1 c bread crumbs
1 c crushed pineapple in juice
1 c chopped onion
1 clove garlic minced
1/2 c chopped celery
3 tbsp oil
1/4 c chopped parsley
1 egg, beaten
1 tbsp tamari or soy sauce
1 tsp salt
2 pinches CAyenne
1 cup grated cheese (especially good with swiss)

Combine pineapple and breadcrumbs

In food processor (or with a knife) coarsely chop garbanzo beans.

Combine remaining ingredients in order given. Place into an oiled loaf pan or small casserole dish. Bake for about 40 minutes until the edges are nice and brown.

This dish is a nice alternative to stuffing. Add a little poultry seasoning for a stuffing like twist. The dish is loaded with protein and is mighty tasty. It came from my grandma's neighbor, Jan. I am always excited when she brings it!
