Ingredients: 1 Box Manicotti shells 1 Lb. lean ground round (or you could use ground turkey) 1 -2 cloves of minced garlic 1 Box frozen chopped spinach 3/4 cup Parmesan or Romano cheese 2 Eggs 1/2 tsp. salt
Tomato Sauce: You can buy your favorite marinara sauce, or make your own.

Directions:Cook manicotti shells per box directions.
Cook together, then drain off grease and set aside to cool: 1 lb. ground round (or turkey) and minced garlic cloves.
Cook and squeeze out all excess water from the 1 box of frozen chopped spinach.
Mix ground round (or turkey) and spinach with: 3/4 cup grated Parmesan or Romano cheese, 2 eggs slightly beaten and 1/2 tsp. salt.
Stuff cooled manicotti shells with combined mixtures. Spoon "your tomato sauce" into the bottom of a 13 x 9 pan. Place Manicotti side by side in pan. Spoon more of "your tomato sauce" over tops, sprinkle with grated Parmesan or Romano cheese and cover top with thinly sliced, or grated mozzarella cheese. Bake 325º for 25 minutes. |
