5 Tablespoon Balsamic Vinegar
2 Tblsp. Olive Oil
1/2 Tsp. Dijon Mustard

8 oz. Penne Pasta, uncooked
3/4 lb. boneless skinless
chicken breasts, cooked and cubed
4 ripe plum, (ROMA) tomatoes, diced
1/4 cup chopped flat leaf parsley
6 oz. fresh Mozzarella cheese, cubed

Directions:

In a small bowl, whisk together dressing ingredients, set aside.

Cook pasta according to package directions, omitting salt. Drain pasta and run under cold water until pasta is cooled. In a large bowl, toss cooled pasta with remaining salad ingredients.

Drizzle dressing over salad and toss well to coat.
