3/4 cup dried red lentils
1 pkg. powdered beef or veggie broth
salt and pepper to taste
1 cup parsley, chopped
1 cup onion, chopped
1 cup red or green pepper, finely chopped
vinegar and oil to taste

Directions:
Directions:
Wash lentil and place in saucepan with enough water to cover. Cook 15 minutes, then drain. Refill saucepan with broth to cover. Add salt and pepper. Simmer slowly until lentils are tender, about 30 minutes. Drain and chill lentils.
Before serving, mix in parsley, onions and peppers. Season wit olive oil and vinegar.

Do not overcook lentils, as the easily break apart. May use brown lentils. They will need a longer cooking time but above precaution still applies.
