2 cups all-purpose flour
2 cups sugar
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
3 cups finely shredded carrot (9 carrots)
1 cup cooking oil
4 eggs

Directions:
Directions:
Grease and lightly flour baking tube pan. In large mixer bowl stir together flour, sugar, baking powder, baking soda, salt and cinnamon; add carrot, oil and eggs. Mix till moistened; beat at medium speed of electric mixer for 2 minutes. Pour into prepared pan. Bake in 325º oven for 50 to 60 minutes or till toothpick inserted in center comes out clean. Cool thoroughly
