Preheat oven to 400

4 flour tortillas (10-inch)
1 tbsp canola oil
1 lrg onion diced
1 jalapeņo minced
2 cloves garlic minced
1/2 tsp ground cumin
course salt and ground pepper
2 cans black beans, drained and rinsed
12 oz beer or 1 1/2 c water
1 package of frozen corn (10oz)
4 scallions thinly sliced
2 1/2c shredded cheddar cheese (8 oz)

Directions:
Prepare 9 in springform pan by spraying with cooking spray. If you don't have a springform pan, you can use a deep dish pie plan. trim tortillas with a paring knife so they fit the 9 inch pan.

Heat oil in skillet over medium heat. Saute onion, jalapeņo, garlic and cumin. Season with salt and pepper. Cook until onion is softened (about 5-7 min.)

Add beans and beer and bring to a boil. Reduce heat to medium and simmer until the liquid evaporated. Stir in corn and scallions. Save some scallions for garnish

Place one tortilla in the bottom of the pan. Layer 1/4 of the bean mixture and a 1/2 cup of cheese. Repeat three times and place 1 cup of cheese on the top layer. Bake 20-25 minutes (or until cheese is hot and melted.)

Unmold pie and sprinkle with scallions. Slice and serve.

Sour cream, salsa and guacamole are great on the side!
