2 tbs vegetable oil (not olive oil)
3 scallions chopped fine
2 cloves garlic minced
1 tbsp minced fresh ginger
1 c water
1/2 c creamy or chunky peanut butter
1/4 soy sauce
1/4 distilled white vinegar (or rice wine vinegar)
3 tbsp firmly packed brown sugar
1/4 tsp dried hot red pepper flakes

Directions:

In a saucepan, heat oil over moderate heat until hot (but not smoking.) Cook scallions, garlic, ginger and stir until fragrant. Your goal is to saute and not burn. If the oil is too hot, take off the flame.

Stir in remaining ingredients and bring to a simmer, stirring constantly for 2-3 minutes. Sauce will firm up as it cools. If it is too thick, add hot water a tbsp at a time until it is desired consistency.

Fantastic on pasta with steamed broccoli. Can be used as a stir fry sauce.
