preheat oven to 450

1 large eggplant (about 1 lb)
1 clove of garlic
1/4 tsp salt
1/4 c parsley
2tbs tahini
2tbs lemon juice

Directions:
Directions:
Cut off ends of eggplant and place on baking sheet. Roast for 20 minutes. Cool completely.

Place roasted/cooled eggplant into a fine mesh strainer or colander. Squeeze out as much liquid as possible.

Put all ingredients into food processor and blend until smooth. Season to taste.

Eat with pita, crackers, veggies or as a sandwich spread.
