4 eggs, beaten
4 cup flour
1/4 tsp salt
3/4 cup water

Directions:
Directions:
1. Place the flour in a mound on a pastry board and make a well. Pour remaining ingredients into the well and beat with a fork while gradually blending in the flour.
2. When all flour incorporated, knead until smooth and elastic. Cover and allow to stand about 1 hour.
3. Divide the dough into 4 sections and roll out according to the directions for pasta machine using first setting 2 and then re-rolling on setting 4.

Pasta may be cooked immediately or dried for future use.

When ready to serve, bring 4 quarts of water to boil. Add pasta and boil, uncovered, stirring gently and frequently, until tender.
