2 sticks of butter
4 egg yolks
1 T. fresh lime (or lemon) juice
1/4 t. salt
dash of cayenne pepper

Directions:
Directions:
In a small saucepan, heat butter until it bubbles. Do not let it brown. Put egg yolks, lime juice, salt and cayenne in blender and turn on low speed. While blender runs, remove cover and pour in hot butter in a slow, steady stream until blended.
To keep it warm, set in pan with a couple inches of hot water.
