1 cup whipping cream
1/2 cup milk
1/3 cup corn syrup
3 cups white sugar
1/4 tsp. salt
3 capfuls of almond flavoring

Directions:
Always put liquids in heavy pan first. Put in sugars and rest of ingredients being careful to keep sugars from the side of the pan as you blend. When mixture comes to a boil, don't stir. If there are sugar crystals on the sides of the pan, wash them down with water and a pastry brush. Cook on medium heat the entire time. When it reaches soft ball stage or 238º, pour onto a bare cookie sheet and let it cool. When the bottom of pan no longer feels warm you can start to work the fondant. Don't touch until then. Large sugar crystals form and will not work out if you work it before it has cooled. Add almond flavoring and work in into fondant. Candy will set up in a solid form, Let it cool a little bit longer, then it can be put in plastic freezer bags for later use. Handles better for rolling and dipping if set in fridge over night.
