2oz margerine
2oz flour
4oz caster sugar
2 eggs
1/4 pint milk
1 tbsp grated orange rind
Juice of one orange

Pre-heat oven to moderate heat - 400º F or Gas Mark 5
Well grease an oven-proof dish.
Cream margerine and sugar together in a bowl until light.
Separate eggs.
Whisk egg whites and put to one side.
Beat yolks well then add milk and orange juice to the yolks.
Add flour mixed with orange rind to creamed margerine and sugar and stir in gently, then stir in yolk / milk mix.
Lastly, fold in whisked egg whites.
Put mixture in greased oven-proof dish and stand this in a baking tray half filled with hot water.
Bake in oven for approximately 45 mins until set and lightly browned on top. When ready, top will be spongy with orange sauce beneath.
