1 &1/2 lbs tart apples- coarsely chopped
1 medium clove garlic- minced
1 tbsp fresh ginger- minced
1 tsp cinnamon
1 tsp cloves or allspice
1/2 tsp salt
1/2 C brown sugar
1/3 C cider vinegar
cayenne pepper to taste

Directions:

Mix all ingredients well in a medium saucepan. Bring to a boil. Reduce heat and simmer uncovered about 45 min. It is done when everything is very soft. Cool and chill.
This cans very well. A triple batch yields 4-5 pints.
