10 good-sized yams or sweet potatoes (red-skinned ones work best)
Cinnamon
Brown sugar
Butter or margarine

Option: Miniature marshmallows

Directions:
Preheat oven to 350º.

Peel and cut sweet potatoes into large pieces and steam until just barely soft.

Put in a baking dish (not too deep) sprayed with Pam.

Sprinkle with brown sugar and cinnamon until liberally covered.

Place pats of butter over top to cover thoroughly.

When sugar and butter has melted, check and spoon melted liquid over the potatoes so they are thoroughly covered with sugar, butter and cinnamon.

Repeat this procedure about every 15 minutes. The more you keep them wet with the liquid, the more candied they will be.

Let bake for at least one hour until liquid mixture is cooking down and uncover them for last 15 minutes so they can brown some.

Option: Add miniature marshmallows during last 15 minutes, if wanted.
