1 lb. ground beef
1 cup salsa (divided)
2/3 cup whole wheat breadcrumbs
1 egg
1/4 t. salt
1/4 t. pepper
vegetable cooking spray

Directions:
Directions:
Combine meat, 1/2 cup salsa, breadcrumbs, and next 3 ingredients in a large bowl. Shape mixture into a small meat loaf pan which has been sprayed with vegetable cooking spray. Bake at 400 for 55 minutes. Brush remaining 1/2 cup salsa over loaf and bake an additional 5 minutes. Let stand for 5 minutes before serving.
