2 Eggs
8 oz shredded Mozzarella Cheese
1/2 C Ricotta Cheese
2 T Butter
1 box frozen, Chopped Spinach
1 box lg Manacotti Shells
2 T Parmesan Cheese
Salt and Pepper to taste

Directions:
Directions:
Thaw spinach and drain well. Beat eggs. Add shredded Mozzarella cheese and rest of ingredients; including spinach. Stuff mixture into manacotti shells. Lay in pan and cover with a jar of spaghetti sauce. Sprinkle with Parmesan cheese. Bake covered for 1 hour in 350º oven.

This is from my old (as in long time) friend with whom I was joined at the hip all through junior and senior high school, Sharon Clark. When she made this dish for us, it got rave reviews! Yum -O- !!
