1 pt Minced Clams (fresh or frozen)
1 stick Butter
1 bunch of Scallions (or 1 lg Onion)
6 lg Potatoes
2 stalks Celery
1 pt Half & Half
1 pt Light Cream
Sprinkle of Basil and Parsley

Directions:
Directions:
Saute onion and finely chopped celery in butter until golden yellow. Add spices. Meanwhile, peel, dice and boil potatoes until soft. Mix about 2-3 tablespoons flour with one cup potato water. Add to sauté mixture. (You want a thicken paste.) Add the clams and potatoes to the thickened mixture. Slowly mix in the cream and half & half. Simmer on low heat for 30-45 minutes and refrigerate overnight.
