2 1/2 C Sugar
1/2 C Water
1/4 C White Corn Syrup
3/4 tsp Vinegar
Pinch of Salt
2 Egg Whites
1/8 tsp Cream of Tartar
1 tsp Vanilla
3/4 C Walnut Pieces

Directions:
Directions:
Put first five ingredients over low heat. Beat the 2 egg whites to a foam and add cream of tartar, beat stiff. Turn up heat under syrup and boil to soft ball stage when some is dropped in cold water. Turn beater on and add 1/2 cup of boiling syrup to egg whites, beating while adding. Return remainder of syrup to burner and boil to hard ball stage (use candy thermometer), then add to beaten mixture, beat a short time and add vanilla and nut meats. Stir and when mixture retains shape, put out by teaspoons on wax paper.

This recipe is a great Connor tradition. Every Christmas, Margaret Connor would cook up batches of Sea Foam and give it out to all the family. When she passed away, I took up the tradition for my family and now make Sea Foam every Christmas and give it as gifts.
