1 C Flour (whole wheat works well)
1/2 C Walnuts, chopped
1 tsp Baking Soda
1 tsp Baking Powder
1/4 tsp Ground Cinnamon
1/2 tsp Salt
1/2 C Butter, softened
1 C Sugar (1/2 cup works well, too)
2 Eggs
1 tsp Vanilla Extract
1 C mashed ripe Banana (about 2 bananas)
1/2 C low-fat plain yogurt (fat free vanilla works well)
1 C + 1 T Rolled Oats (quick cooking and Scottish both work)

Preheat oven to 350º. Line 12 muffin cups with paper liners. In large bowl combine oats, flour, walnuts, soda, powder, cinnamon, and salt. In a separate bowl combine butter and sugar, then beat in eggs one at a time. Stir in banana and vanilla, then yogurt. Add in oats/flour mixture and stir to combine. Spoon batter into prepared muffins pan. Bake for 25-30 minutes or until golden brown.
