1 Cup Butter 1 Cup Sugar 2 Eggs Separated 1 Tsp. Vanilla 2 Cups Sifted Flour 1/3 Tsp Salt 1 ½ Cup Finely Chopped Pecans
Party Butter Cookie Frosting
2 Cups Confectionery Sugar 2 Tablespoons Butter 1 Tsp. Vanilla ½ Tsp. Almond Extract 2-3 Tablespoons Hot Water

Directions:Cream together butter and sugar until light and fluffy. Blend in egg yolks and vanilla. Sift together flour and salt. Add to creamed mixture and blend until thoroughly mixed. Chill dough for at least two hours. Shape into balls about 1 inch in diameter. Beat egg whites lightly. Dip cookies in egg white and then roll in pecans. Place on greased cookie sheets. With finger make a deep impression in center of each cookie. Bake at 350 degrees for 15 to 18 minutes or until lightly browned around the edges. Remove to rack. Fill with sugar cookie frosting.
Cookie Frosting Combine sugar, butter and vanilla, almond extract, gradually add hot water. Beat until smooth and mixture holds its shape slightly. Add green (or other) food coloring. |
