3 T butter
1 medium onion, grated
2 T flour
1 T dry mustard
1 t nutmeg
3 Cups milk
1 lb cheddar cheese, grated
2 cups macaroni, cooked al dente
3 T butter
1-1/2 cups bread crumbs

Directions:
Directions:
- Start the water boiling for the macaroni, preheat the oven to 350
- Grate the cheese and onion
- Cook macaroni, al dente
- Melt butter (3T) and add onion, cook 3 minutes
- Add flour, dry mustard and nutmeg mix well and cook another 2 minutes
- Add milk and cook over medium high heat, stirring frequently, until it is thickened (about the consistency of thick heavy cream) about 3-5 minutes
- Add grated cheese and mix until melted
- Add mixture to cooked macaroni and pour into casserole
- Melt 3 T of butter, add bread crumbs and mix together
- Top macaroni mixture with bread crumbs
- Bake @350 about 30 to 45 minutes (cheese is bubbling through on edges)
