1 salmon fillet per person
Lemon juice
Butter
Black pepper

To serve:
Potatoes
Vegetables
Tartare Sauce

Directions:
Pre-heat oven to 200°C/400°F/Gas Mark 6
Place salmon fillets skin side down in an oven-proof dish that has a lid.
Add a knob of butter, a squirt of lemon juice and black pepper to each fillet.
Cover with the lid and put in the middle of the oven for about 20 mins.
Serve with boiled or baked potatoes and vegetables, such as brocolli or peas. Add a spoon of Tartare sauce - I like Colman's best.
