1/2 lb ground maple sausage
1 sweet potato, cut in 1/2 lengthwise and then thinly sliced
1 med red onion, thinly sliced
2-3 tsp chili powder
1-2 tsp cumin
salt and pepper
1 C grated manchego or cheddar cheese
4 eggs
fresh salsa

Directions:
Directions:
In a large skillet, brown sausage for 3 min. Add sweet potatoes, onion, and seasonings. Stir frequently and cook for 10-12 min or until potatoes are tender. Once the hash is cooked, transfer to a serving platter. Sprinkle with the cheese and cover with aluminum foil- the cheese will melt while you make the eggs. Fry or scramble eggs in same skillet and slide on top of warm hash. Serve with fresh salsa.

Simplified version of a Rachael Ray recipe. I like it better with fried eggs, Eric likes it better with scrambled!
