1/4 C brown sugar
3 tbsp kosher salt
3 tbsp ground coriander
2 tbsp ground ginger
2 tbsp garlic powder
1 tbsp all spice
1 tbsp black pepper
2 tsp cayenne pepper
2 tsp ground nutmeg
1 1/2 tsp ground cinnamon

Mix together, rub on chicken, wrap it in plastic wrap and put in refrigerator for 2 hours. Then grill (great w/ beer can chicken). This rub can also be used on salmon.
