1 tsp paprika
1/4 tsp cayenne pepper
1 tsp black pepper
1/2 tsp onion powder
1 tsp dried thyme
1 tsp dried basil
1 tsp garlic powder
1/4 tsp dried oregano
2 tbsp butter
1 tbsp olive oil
6 (6 oz) red snapper filets
salt to taste

Combine the first 8 ingredients - put on large piece of wax paper. Melt butter and oil. Brush both sides of snapper, reserve remaining butter. Coat both sides of the snapper in seasoning mixture. Heat cast iron skillet on high heat until a drop of water sizzles. Drizzle half the remaining butter/oil on one side of each filet. Place butter side down in skillet. Cook over high heat until fillet is deeply browned. Drizzle other side with butter, flip and cook about 5 min more. Season with salt.
