"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain
1/4 c. water 2 tsp. light corn syrup 3/4 c. sugar 1/4 tsp. cream of tartar 1/4 tsp. salt 1 egg white 1 tsp. vanilla
Combine water, sugar, syrup and salt. Stir over heat until boiling point and sugar is dissolved. Place egg white in bowl and beat until it begins to hold it's shape. Pour hot syrup gradually into beaten egg white in fine stream, about 2 minutes. Add vanilla and continue beating about 5 minutes or until icing loses some of it's shiny appearance and stands in soft peaks.
