4 zuccinis (peeled and cut into quarter size pieces)..
1/2 c. vegetable oil.
1/2 chopped onion (small).
1 small garlic clove (chopped).
2 tsp. fresh parsley.
4 eggs.(beaten).
2 c. bisquick
handful of grated Parmesan grated cheese.
salt and pepper to taste.

Preheat oven to 375º.
Grease pie pan.
Peel and cut zuccini into 1/4 inch circles.
Mix all ingredients including oil.
Bake for 35 to 40 minutes.
Add a handful of shredded mozzarella on top of pie and then bake. (optional).

Tip: when pie is done stick a knife in center of pie if it comes out with some dough on it then cook for another 10 - 15 minutes.
