6 lg boiled potatoes.
3 lg separated eggs.
1 c. grated Parmesan cheese.
1/4 c. chopped genoa salami, ham or prosciutto.
2 tbl. finely chopped parsley.
canola oil.
salt and pepper (to taste) .
bread crumbs.

Directions:
Directions:
Mash the potatoes with a fork or a ricer then stir in the egg yolks, grated cheese, meat, parsley. Add salt and pepper to taste.
In a shallow dish beat egg whites until foamy. Spread bread crumbs on a sheet of wax paper.
Form potato mixture into an ice cream scoop size patty. Dip in egg white and roll in bread crumbs. Let them sit on wax paper for about 20 minutes to air dry.
Fry in deep fryer or in heavy skillet carefully turning occassionally.

Tip: if using a skillet put a 1/2 inch of oil in pan and keep croquettes one inch apart.
