Pumpkin Loaf or Muffins Recipe

1/2 c. margarine
1 c. white sugar
2 eggs
1 can pumpkin, no spices
1 c. white flour
1 c. whole wheat flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. ginger
1 c. chocolate chips
1/2 c. nuts or raisins


Cream margarine and sugar then beat in eggs one at a time.
Add the pumpkin and beat well.
Stir in the dry ingredients keeping the mixture moist.
Spoon into a loaf pan, or 12 muffin cups or 42 mini muffin cups.

Bake at 350F (175C). Loaf = 55 - 60 min. or until done. Regular Muffins = 20 min. or until done. Mini muffins about 10 min. Test doneness when toothpick comes out clean.

Very easy and tasty. Chloe and Emily love these - Enjoy!!
