5 T oil
8 cups fresh or frozen corn
1 1/2 T salt
1/2 T pepper
1 cup small diced red onion
1/4 cup thin sliced green onion (the white and greens)
2 T apple cider vinegar
1 cup julienned basil leaves (opt.) save some for garnish

Directions:
Directions:
Add corn, salt, and pepper to hot oil. Cook 5 min. or until no longer starchy. Remove from heat and stir in red onion, green onion and vinegar. Allow to cool. Stir in basil. Serve cold (best) or room temperature w/ basil garnish.
