1 c. butter milk (use whatever milk you have)
1 c. oatmeal
2 tbsp. butter or margarine
c. brown sugar
1 egg
1 tsp. vanilla
1 c. flour (can use cup white flour and cup whole wheat flour)
1 tsp. baking powder
1 tsp. baking soda
tsp. salt

Preheat Oven To: 400
Yield: 1 dozen muffins


Add milk to oatmeal and let stand.
Cream butter and sugar.
Add egg and vanilla. Stir well.
Add dry ingredients and stir.
Add in oatmeal mixture and stir.
Fill greased (spray them with Pam/equivalent, or use paper or reusable silicone muffin liners) muffin tins full and bake 15 to 20 minutes at 400 F.

I doubled the recipe and stirred in 2/3 c. chocolate chips before scooping into tins. They did not last long - Enjoy!
