1 - 3/4 c. flour
3 tsp. baking powder
1/2 tsp. baking soda
2 T. sugar
2 T. light brown sugar
1/2 tsp. salt
1 egg
1 c. milk
4 T. butter, melted and cooled
1 T. orange rind, grated
6 T. marmalade

Preheat oven to 400º.

In a large mixing bowl, sift dry ingredients together. In a separate bowl, beat egg mixture lightly, then beat in milk. Add butter and orange rind to egg-milk mixture. Make a well in the center of dry ingredients and add liquid mixture all at once. Using a large wooden spoon, stir batter with 10 - 15 strokes or until ingredients are just combined. Do not over mix. Spoon enough batter to generously cover the bottom of 12 well greased muffin cups. Add a generous 1-1/2 teaspoon of marmalade to each cup, then enough additional batter to fill each tin 3/4 full.

Bake in center of oven for 18-20 minutes. Remove to a wire rack and cool slightly. Serve warm.
