1 4-5 pound chicken
1 large onion, quartered
1 1/2 teaspoon salt
1/2 cup butter or margarine
1/2 cup flour
2 cans (4 ounces each) mushrooms, drained (reserve juice) or 1 cup fresh mushrooms, chopped
1 cup evaporated milk
1 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon turmeric
1/2 teaspoon oregano
2 cups cooked rice
2 1/2 cups boiling water
1 1/2 teaspoon salt
1 tablespoon butter
1/2 cup chopped green onions
1/2 cup shredded mild cheese

Directions:
Directions:
Cook chicken until tender in water to cover with onion and 1 1/2 teaspoons salt. Cool chicken, reserving broth. Remove skin and bones, and cut chicken meat into small pieces.

Melt butter in saucepan. Stir in flour. Add 4 cups liquid (juice from drained mushrooms and chicken broth) and evaporated milk. Cook and stir until sauce is thick and smooth. Add mushrooms, 1 teaspoon salt, pepper, turmeric, and oregano. Spread rice in bottom of a large baking dish. Top with chicken, then with green onions, sauce with mushrooms. Sprinkle cheese over top. Bake at 350º for 30 minutes.
