2 egg whites
1/4 cup sugar
1/2 tsp vanilla extract
1/4 tsp almond extract
7 oz sweetened flaked coconut
4 oz semisweet chocolate, melted
Optional: orange zest, strawberry fans for garnish

Directions:
Directions:
Preheat oven to 325F. Line a cookie sheet with parchment paper.
In a bowl, combine egg whites, sugar, vanilla and almond extracts. Lightly beat with a fork until sugar has dissolved. Stir in coconut.
Drop the mixture by level tablespoonful onto cookie sheet. Bake in center of oven until golden, about 25 minutes. Cool slightly, then remove by gently peeling away the parchment paper.
Place melted chocolate in cup and dip one side of each cookie in chocolate. Return to parchment paper and allow to dry.
